Painting latex primer over wood trim
 
What is the worst that could happen if I paint a latex primer over existing wood trim that has been sanded ?

Well, if you don't vacuum up the sanding dust there is a possibility that the primer won't adhere properly & give you an unsound surface for your finish coats.

You don't provide much information. If you have new, patched sanded and wiped wood, use a good Latex Enamel Undercoat. If you have previously painted, cleaned, sanded and wiped wood, a good adhesion-promoting primer would be sufficient.
