Painting Doors vs. Baseboards

Can I get away with painting the doors and doorframes and not the baseboards?

Sure . You can get away with whatever you want. But if you want a real answer we'll need a lot more info-
What are you painting, what are they now, what are you painting them with, what is your design plan, do you care?

Just as a starting point, almost always, all trim is painted the same. But I have seen it done different when there was a design reason to do it.
