What the professional way of fixing cracks in ceilings and walls?

That depends where, why, what, and how big they are
Most small, regualr, cracks in normal drywall it's skimming some joint compound over them

If you have the old plaster and lath, you can scrap them
to give you a v shape (use an old beer can type opener), wash off the excess leaving the v damp and plaster over. MOST of the time this works (assuming your plaster is still attached well to the lath).

Yup, really depends on what type of cracks, and what type of substrate you're talking about. I agree with slick, if it's drywall, we usually tape and skim depending on how big they are.
