How long is a piece of string? No one answer to that either...The answer isn't out of a trade manual but will depend on your local parameters.

About 400 sq. ft / gallon; primer likely less. Cans have approximate coverage on them. Measure your walls, add up the sq. ft and then do the division.

I would ordinarily suggest a coat of primer and two coats of paint for anything but if these are just regular closets and you are doing them in white? I would just prime the raw wood and new drywall (if that is your situation), can spray paint the hardware, and put a good contractor grade paint over everything. Nobody is going to see it much and you will ding up the closet pole with hangers and so forth no matter what you paint it with. If they are designer walk in closets then I would treat them like any other painted room.
