Random bitter pieces of chicken when cooking


Wonder if anyone more experienced then me with cooking can give some insight on this. Whenever I make something with chicken, more specifically, cut up pieces of chicken breast, every now and then while eating I'll hit a piece that taste HORRIBLE. I have to spit it out. It's hard to explain the taste, it's just very bitter and strong and leaves a bad aftertaste. I've even noticed this with prepared foods, like for example pizza that has chicken on it. Maybe 1 out of 5 pieces will be like this at times. I notice it more with chicken that I cook myself though.

Is it a specific part of the breast that should not be used? Or is it maybe undercooked, or too cooked?
