How does this work?

I saw someone do this trick with a Hershey's bar and now I found this video of the same trick. I don't mean to sound like a ditz, but how can three of the 63 pieces be removed while allowing the puzzle to remain 7 squares from side-to-side and 9 squares from top-to-bottom?

It has to do with the angles. Although they appear to be the same and line up, they are not. The slight gap created by the difference in angles is where the space goes.

Google missing square math and you find some examples. I could not find this exact puzzle explained.
