Right back at ya Barb, up early or up late? I am up early ready to smoke the turkey.

Thanks Jim.

I'm up late. I meant to get some of the cooking started today but had a full load of daycare kids. So that delayed things until the evening, but then I got a nice surprise when my grandson came over to spend the night. He's 9 and I love spending every minute I can with him.

Well, we got out some tracks and lighted cars and started playing with those until I heard Santa outside, checking up on him. So we quickly got him to bed and I actually fell asleep, waiting for him to fall asleep. We watched part of a movie together. So I got back up around midnight and got started in the kitchen.

That smoked turkey sounds delicious. I don't believe I've every tasted smoked turkey. How long do you keep it in the smoker?

Are you and Judy having the family over today?

Judy started yesterday morning cooking, she cooks everything from scratch even fresh sweet potatoes for the pies. Her dressing is fantastic, one of our grandsons said he wasn't eating anything til Thanksgiving dinner. The local youngens will be here with us today.

It depends on how long the turkey smokes by the temperature of the smoker and size of turkey. Some smoke around 225 degrees, I smoke at 325 degrees because we like crispy skin. We don't smoke a turkey over 12 pounds because the turkey has to get past the 140 degree mark inside, between 3 1/2 and 4 hours or it is ruined. We smoke to 160 degrees internal temps, in the breast. About 4 or 5 hours and it is done.

I smoke with hickory saw dust and chunks with 5 charcoal briquettes on our electric smoker. I just don't have the umph to watch a charcoal smoker anymore. Our son got us a really good remote meat thermometer and I use it religiously, plus the hand digital thermometer to make sure the food is cooking right.

We love smoked turkey, it is really good, and poplar with our family. Smoking is a hobby with us, we love it.

How did the turkey and all the fixin's turn out Jim?

A broken oven turned out t be a good thing for me.

I fired up the smoker (Jim inspired me) --smoked turkey---and ribs--oh,so good--
I just returned from visiting some old friends---this has been a good day. I hope you all enjoyed a good meal and the company of friends---

That's what you call making lemonade when life gives you lemons.

I'm glad you had a good day Mike!

Barb things turned out good, everyone survived, no casualties.LOL I was worried about the turkey because it got done faster than I expected but all was well after all.

We are glad y'all had a great time with your folks and friends today, that is what it is about family, friends good food and fun. That sure is a lot of hard work to have fun though, but we love it.
