Anybody BBQ?


Beautiful,. We just got through with a rack of baby backs, I finally have found the right combination of spices for a dry rub, am serious as a rooster dippin snuff, and if I tell you a rooster dips snuff you can raise his left wing and you'll find a box of Tuberose Snuff.

No joke I did finally get the spices right on my rub this time, these were the best ribs ever. With baby backs I use the 2-2-1 method with spare ribs I use the 3-2-1 method. Baby backs, 2 hours unwrapped 2 hours wrapped in foil the another hour unwrapped, if they start getting too dark I will wrap them back up to finish out the time. Here are the rub spices

1 tsp Cayenne, (more if you like it hot)
4 tsp Celery Seed
3 Tbsp Sea Salt
3 Tbsp black pepper
2 Tbsp Dried Thyme
2 Tbsp Oregano
4 Tbsp Cumin
4 Tbsp Allspice
6 Tbsp Hungarian Sweet Paprika
2 Tbsp Garlic Salt
4 Tbsp Chilli Powder

Coat the ribs with yellow mustard then coat the ribs both sides with the rub, smoke at 225į. I use hickory saw dust, you can put a couple of hand fulls of saw dust in aluminum foil and punch small holes in the foil for the smoke. My smoker is electric so I put 5 brickets of charcoal near the element for the smoke ring. I was too hungry to take a picture and they are gone now.

Judy made some brownies from scratch with warm chocolate poured over them, man talk about stuffed.

Well rats! I just gained 2 lbs. reading your post Jim!
One pound of it was from reading about the brownies.
It all sounds delicious.
I've never tried using rubs or a smoker.
Gotta put it on my list-of-things-to-do.

shrimp kebabs, shrimp creole, shrimp gumbo, pan fried shrimp, deep fried shrimp, stir fried shrimp. There's pineapple shrimp and lemon shrimp, coconut shrimp, pepper shrimp, shrimp soup, shrimp stew, shrimp salad, shrimp and potatoes, shrimp burger, shrimp sandwich..

I think I perfected those pork chops in the first post of this thread. I lightly coated them in Olive Oil, and seasoned them with fajita seasoning. Then, let them sit in the fridge for about an hour before cooking them. I ate almost an entire pound. It was so good.

Figured out how much steak I could eat in one sitting. 28oz.

I had the one on the left, and a co-worker had the other one. He could only handle about 2/3 of it.
