Advice....the workers chipped my new tub and 'trashed' my house!

There are plenty of good, licensed, insured contractors around. But when I read or hear of stories like this it usually means that someone didn't know any better, or they were trying to get off cheap. Sounds like the latter in your case, you should have known better. Sorry for the rant, but I get tired of people whining about their own stupidity.

actually there is such a thing as an oral contract. An oral contract is no less enforceable as a written contract. It is harder to prove what is included in an oral contract but unless a written contract is legally required, an oral contract is still an enforceable contract.
