new and needing some good advice

Hello my name is robert i am experienced in dry wall done a little this and that i reacently got a house that the back part is dropped after inspecting further i noticed all around the house crumbeling of the foundation the house has a coal celler or fruit celer in it and a verry tight crawl space i am planning on jacking up house and setting new foundation block once i find solid foundation i hope this is proper way to fix problem my question is would it be better to do that or to buy piers and set them in the coal room to support the weight of the house or bith and how do you fix it in that small crawl space do you dig out around footer then jack up bye sections or what my kitchen floors roll like a roller caoster with both sides being low and center floor high is this the result of the bad foundation and will they straitighten up once floor is jacked up if any one has drywall concerns hollar at me i am retired from the craft but have plenty of knowledge on hanging and finishing thanks
