100 year old house

My house is in a great location, I have lots of space, 2 acres of land, 2 barns, and a pond full of fish!...but, the foundation has settled, and my floors are all sloped (towards the rear of my house).
The only "real-problem" with this, is my bathroom!...I believe it was added about 40 years or so ago, and I'd love to strip it down to bare studs, and start over!...I'm in a rural area of Alabama, where there are almost NO building codes! (or, at least none that anybody goes by around here! Some houses look like mansions, and some look like they were built out of shipping pallets, with out-houses for bathrooms!)
Leveling out my floor joists, underneath my bathroom is my concern...Should I cut shims, to place on top of the joists?, should I sister some 2"X12"s on to the existing joists?... Where do I begin?

Look at the building codes even if they are not in effect where you are. They are the worst you can build and still be accepable.

You may not follow them, but they tell how it should be done.
