What is the easiest way to go about removing the rotten part and replacing with new

There is never an easy way to do anything. I would start by taking up the floor covering and then removing the rotted part back to good material at the top of a floor joist. You can then replace the rotted part with new material of the same thickness and install new floor covering.

Rotten Bathroom floor. Let me guess...leaking tub/shower?

Chances are that the joists may be bad in some areas too. When you open the floor up check for pest damage because of the moisture. If the joists are rotted too, you may have to sister them up.
