I would like to know whats the difference is between floor tiles and wall tiles?
Is it possible to use floor tiles on walls or is that never done?
If you can, would you use a different thin set and grout?

Floor tiles are made for much more wear than wall tiles. You can put floor tiles on the wall. Don't put wall tiles on the floor. The adhesive/thinset you use is predicated on the surface it's going on. Modified thinset would go on an absorbent surface like plywood and wallboard. Unmodified would be used for a ditra like product which is not absorbent.
I echo what Ron said...while it might be feasible to use floor tiles on a wall, you would never want to put wall tiles on a floor. One thing I have seen is using floors as ascents on a wall, surrounded by some smaller tiles. I personally thought it looked awful, but that is all in your design....
