I was taping an inside corner, and by mistake when I was passing the knife to get the mud out of the tape, the knife cut into the tape right where the tape folds. Can I cover this up with the mud on the next pass, or do I have to put a piece of tape to cover this? I will assume the mud will cover this.

If the cut occurred right at the corner, I'd say that it would be a good idea to overlay it with another piece of tape. If it is only 1/2" long I wouldn't sweat it. If it is longer than an inch or two I'd fix it with tape. Be sure to bed the replacement tape in some mud and don't just go over the top of it.
Yes, mud will conceal, but you've got a good potential for a small crack there.
Thanks KCtermite, I will definately add another piece of tape over it to be on the safe side. Don't want it haunting me in a few years, I haven't given it the second coat, so this is the time to do it.
