Which side of 2x8 is crown?


I'm sistering some joists, and know to put them crown side up. Some (few) have visible crowns. Most do not - they're perfectly straight! Is there a way to tell which side is (or will) crown?

Also, they're larger than my older existing 2x8 joists which are 7" tall. These new ones are 7 1/8" tall. Is this because of higher humidity? Will they eventually shrink?

they should be 7 1/4" and humidity will not change that more then a 1/16" crown the best you can, if they are straight go with the center or heart on the bottom.

Good question, I take the time at HD to select the straightest lumber I can find and most of the time I can't tell the crown side. Thanks for the tip King.
