Saving Old Rock Wall

I'm looking for a treatment for the rock walls in a very old rock house. The walls were furred out years ago but the owner wants to tear all that out and just coat the inside of the rock wall to seal it. Is there something that can be sprayed on the inside that will do that and still leave the nice rocks showing on the outside?

Need more info. Pics and the ultimate goal of the exercise would help.
