Rebuilding block foundation on Fieldstone

This project is to move the basement door over so that it aligns with the new staircases. The foundation is concrete block above grade and field stone below.
I spent the day surgically removing concrete blocks and removing the door. Now it's time to start building back up with new blocks. I'm down to the field stone portion of the foundation.
I need to level the top of the field stones and lock a few small field rocks back into place. What product do I use for that?
Should I cap it with concrete (quikrete 5000) or mortar? My thought is to sculpt it with concrete, let it set up, and then start laying blocks.

That sounds good to me, but some of the guys here might know better. .....if they read your post.
Maybe if we changed the title to "Rebuilding block foundation on Fieldstone while naked" would work?
My question in electrical has had numerous views with the title I chose...... "Acceptable nudity?" :laughing:
