Open Gable Patio - Outdoor Kitchen

Hi everybody, I'm new to the forum and I have a few questions about a project I'm planning on starting. I did some searching of past posts before posting, but if I missed something that would answer my questions please redirect me.

Anyway, I want to build a detached patio to house an outdoor kitchen and fireplace. The look that I am going for is an open gable structure. I want to build something that is a nice size, somewhere between 12x12 and 15x15.

I am just wondering how many and what size support posts I should be using. I am thinking about using 6 6x6x12 posts cemented 4ft. in the ground. I also have some questions about having all of the posts line up to one another. Would it be easier to have the heights level before concreting them, or trimming off the tops after the concrete has cured? Any advice or input would be greatly appreciated.

The tops are always cut off once the post have set up, to get them in line a simple piece of string works fine.
