new header in

I was able to put new header (2) 2x8's with 1/2" plywood in with no issue- It's going in a 5' opening pass thru between kitchen and dining room. Only thing I notice is that since some of the older existing studs are not exactly perfectly straight- my king studs are a tad out of whack (twisted slightly)- does not seem to be an issue except that the new header sticks out maybe a 16th of an inch only in small area where it meets the jack stud- Should I leave it and just sheet rock over- or sand it down? I know sheet covers a lot of the rough framing issues that are never perfect.....
