Insulation: Converting screen porch to a 4-season

Have an existing screen porch and want to add windows, heat/ac to the room. Exterior is 1/3 stone, and the rest cedar and window/door area.

I can easily expose the interior rafters/joists and 2x6's of the walls. So what is the best way to insulate ceiling and walls? Can I do this from the inside without stripping the exterior? How about a "house wrap"- is it needed? Thanks.

You'll need to see what sort of foundation you have. To convert this legally, you might need to upgrade some items.
