what is the difference between unfaced and cellulose insulation?

It all has to do with the concept of a "vapor barrier" in many cases. There are many forms of cellulose insulation.

If you are talking about unfaced fiberglass, there is a huge difference on many levels. They are almost not the same aspect of the building envelope (ie, insulation. Yes, that is a bit of hyperbole on my part.) Fiberglass batts are terrible insulation; cellulose is very good. Read on buildingscience.com and greenbuildingadvisor.com.
