How to fix bowed ceiling joist?

I have 3 bowed ceiling joists that support my 2nd floor. The joist are exposed with no sheetrock, so I want to take advantage and fix now (not to mention the sheetrock will look horrible if not fixed). They are undersized (code minimums) 2x8 that span 12+ft. The sag seems to be only from the crown installed upside down.

What would be the best approach to adding a sister? Thanks for your help

It sounds like you mainly want a flat ceiling but dont care to remove the dip in your 2nd level floor correct. You could find the lowest spot in the ceiling and fur the rest to match with 2x4's 16db nails and liquid nails. But I would think that jacking and sistering on to warped joist would be better because It would also level out the floor up stairs.

That's one of the best plans. But how would I take the bow out of the ceiling if the joist is still there? Should I cut the bad joist somehow?

I may have misunderstood I was thinking that the ceiling was sagging. Is it a sag or an arch like bow

It's an arch like bow. This occurs in random places throughout the house. The wood was installed crown down. But how to correct that after the fact?

That sounds like a good idea. I guess I could reinforce with another 2x and then plane the difference.
