drywalling over a warped textured ceiling

I need to drywall over a painted textured ceiling. The problem is there is a wonky roof joist that is making an area of the existing textured ceiling not level. How can I fix this to make the new drywall (that is to put up over the textured ceiling) be level and not warpy like it is now? What is the correct way to approach this?

Is it a roof joist or a ceiling joist? Is there an attic above or another floor?
To get rid of the warp, you need to address the offending joist, whether you cut it and sister on another or remove the current ceiling and shave the joist.

If it is just one joist causing the problem because it is was installed crown down or something? Replace it or turn it around if you can get to it.

You only other option is level the existing ceiling with fir strips or whatever. You will need a laser or string level to make sure you have a new flat ceiling.

There is an attic above the ceiling so I believe it is the roof joist.

A roof joist has a roof attached to it. If the attic is above, it's a ceiling joist or floor joist depending on where you're standing.
The point is that you can get to it and replace or modify it.
