Digging further
 
I am looking at a house right now that has a 3-4 ft deep crawlspace underneath it. If I get the house, I would like to make that a bit deeper (about 6-7 ft deep). Is this kind of thing possible/plausible and how much would it cost?

It is possible, but is not simple since you will have a great deal more horizontal soil pressure.

It would require an engineer's opinion and then a design if it is possible.

While you at at it, you should also put in drain tile and a sump if you plan to finish the basement.

You'd basically have to jack up the house and build a new foundation underneath, wouldn't you? Just digging down 4 feet would undermine the current foundation.

Hire an engineer to tell you what you can do and give options.

There are ways to do it without raising the house.

Hiring an engineer is cheaper than guessing or doning things that are not necessary. You will lose some space inside.
