Board sheathing
Is there any advantage to the "old" board sheathing method, versus the more contemporary panel sheathing? Question applies to both roofs and walls.

Sheathing with boards dates back to construction before plywood or composite panels were readily available and were very expensive. I certainly don't see an advantage to using that method today. In fact it would be outrageously expensive to use dimensional lumber today.

There are no benefits to using boards. Plywood and OSB in addition to being faster to install, offer shear wall resistance that would need to be built into the framing if sheathing with boards.

How do the panels create shear resistance when the boards do not? Is it a function of the size of the panels? Or how the panels are manufactured?

Diagonal sheathing boards were used for sheer resistance for many years in millions of structures before OSB or plywood became popular.
