You should probably start by reading the California Title 24 that has the energy efficient lighting requirements for kitchens so you will know what your options are.
After that your spacing will be affected by ceiling height, bulb type, room usage, work surface height, type of lighting etc.
I know the requirement. Its 50% of lighting wattage in kitchen must be from high efficient type, flourescent, LED, low-voltage, etc., and dimmable. No problem there, I plan on installing low-voltage lights.
Ceiling height is 8ft, for general lighting. Exact bolt type is TBD.
