kitchen countertop outlets, opposite from sink
my kitchen has a sink/DW on one side and counter tops with power outlets on the other side of the aisle. the only water supply on the counter top side will be for the fridge, which is not accessible from the counters. was wondering if those counter top receptacles still need to be GFCI ?

Yes. As well as any island receptacles.

how about regular wall (non-counter-top) receptacles in the kitchen, that are like a foot above the floor ? can they be regular ?

Yes, depending on their relation to the sink. But I like to put all the kitchen receptacles on a GFCI. Just a personal preference.

All the "general" use recepts have to be GFCI protected, however not all recepts have to be GFCIs.

ONLY receptacles serving counter areas require GFI protection. You can choose to protect anything you want beyond that.
