The methods, materials, and codes involved in wiring your lights are going to be very different from how we do it here in the States. Most people here are from the U.S. so I'm not sure if anyone is familiar with Australian electrical codes.
But in the States, we'd find or install an appropriately sized circuit, 15 or 20 amp (I believe I read that you guys have 6, 10 and 16 amp lighting circuits?), and take it to a switch box that we install in the location the lights need to be controlled from. Another cable, a 12-2 as we call it, the Brits call it "twin and earth", not sure what you call it, would go from the switch to light boxes installed for each light. Wires would be attached color-to-color.
Sorry that's not more helpful, because I just don't know the local electrical lingo or codes. It may be best to consult with your local building inspector. He will tell you what materials and methods he would allow for the project.
