What do you think of this Carrier system?

-58CVX090116 Infinity Series Variable Speed, 2-Stage Heat 80% Gas Furnace
-24ANB642A003 Infinity Series 16 Seer AC
-C60A245C286 ADP Up Flow Cased Coil

Any thoughts or recommendations? It'll be a 3.5 ton.

The furnace is good. Carrier top of the line Infinity Series for an 80% furnace. This is fine for SoCal.

The condenser is also good, a Carrier top of the line Infinity Series.

The Coil is a non-Carrier unit. Ask for a matching Carrier Coil like a CNPVP unit with aluminum coils. I think ADP may make the Coils for Carrier. Need to ask or look on the internet.

he appears to be bidding on good equipment in general.

I am not familiar with it. No, it isn't on the bid.

Beenthere is alluding to this Infinity Thermostat, by Carrier, your contractor should be including this thermostat with the Infinity System (see model number below). It is actually a very nice thermostat. Easy to read numbers, easy to use and can be programmed to operate as if it was a non-programmable thermostat. So you can have the best of both worlds: Legally have a programmable thermostat but able to also operate it as a non-programmable, which makes it very simple. We did that with our Carrier Edge Thermostat.

ADP is a HUGE company (Advanced distributor products) that makes coils for lots of aplications/companies and is owned by Lennox. Very good quality coils. Not sure why he does not choose the Carrier. They have had some issues with leaky coils and maybe he has better success with ADP. I have a ADP coil and have seen thousands of them used in Winnipeg. I would stay with his choice. Aluminum vs copper is a matter of contractor preference. Both have had problems with leaks. I like copper as it is a stronger metal. ADP is copper and I have had no leakers.
