Pilot light does not stay on
I'd wait for an HVAC guy to reply but rest easy for now, I think it is just the thermocouple. Cheap and easy to replace.

Pilot light does not stay on
Could be bad thermocouple.
Bad gas valve.
Tripped roll out switch.
Or a tripped ECO, in which case the gas valve still needs changed out.
Looks like thermostat is turned all the way up.

I pulled out the thermocouple and planning to replace it tomorrow with a new one. If this is not the problem, what is tripped roll out switch and/or tripped ECO.
Yes. In the picture, thermostat is all the way up.

Your last pic has the roll out switch.
ECO is part of the gas valve/thermostat assembly on most water heaters, and not resettable.

How do I reset the roll out switch. I want to try this first before buying a new thermocouple.. Can you please let me know ?

Push the button in the middle of it. If it resets, then you know you have a problem that caused it to trip, and need to find out what that is.
Could be a restricted chimney.

I tired to push the block knob but it does not really go in.. what does that mean ?

Its probably not your roll out then.
Could be gas valve, thermocouple, or ECO(emergency cut out).
Do you have a meter to test anything.

No, I don't have any meter to test.. I will go ahead and get a new thermocouple.. I will let you know then..

I put the new thermocouple but it still does not work.. I tried 3 times, pilot gets on but does not stay once I release the button.

Could be the valve or ECO. If its the ECO, you still need a new valve.
With out meters to test things. Can't tell you anymore to do.
