how to turn of tankless hw while leaving on oil burner

I want to turn off the domestic HW tankless function in my oil burner while leaving on the home heating function. I am in FL 5 months during the winter and burn about 1 gallon of oil per day for hot water when we aren't here. If I could turn of the tankless HW I could save close to $500 per winter. Thought of disconnecting or shutting off electric supply to the aquastat, but want advice first.

if your runnng the heat in the winter the domestic hot water is already covered at around's in the summer when your not using the boiler to heat the unit cycles to make domestic at that lower temp setting to wash with.
