HELP walk in cooler not hittinG 41degress


inspector came by and the first thing he checked was the temp on our walk in it was at 52. he wants to shut us down and is coming back in four hours . i clean the coils put a fan to it and have been spraying with water and managed to get it down to 50. any advice or tricks to get it down to 41 at leas for a couple of minutes. oh he brings his own thermostat...
any advice or tricks is greatly appreciaated. the cooler is an old wooden one. .

Call a refrigeration mechanic if the unit is not working. There is no sense in trying to fool an inspector...bottomline, your cooler must be at least 36 degrees F or your food will spoil. And being the reputable businessman I know you are, you really wouldnt want to serve food that has gone bad, would you? That would get you shut down. If the compressor is running and is extremely hot, it is probably low or out of refrigerant....a mechanic must fix the leak and recharge the unit. This is not really DIY material unless you have the tools and know - how.
