Bleeding a boiler system

I still have gurgling in my heating system. I have what appears to be 2 bleed faucets in my 2 active zones. Beneath each faucet there is a shut off. Do I close the shut offs before I open the faucet to bleed the system? Do I leave the boiler on when I bleed it? Or is the only way to bleed it by going to each register and opening the small bleed. Do I leave the boilers running when I do this. Help
