I think so too if you are going to use pavers for the patio surface. They are relatively thin and you would cut them to fit around the pergola posts.
If you are going to pour and stamp the patio? Depending on how elaborate the pergola and its weight, you may be anchoring the posts to the top of the concrete. In this case you would, of course, pour, stain and stamp the slab first I should think. Or pour it to incorporate santitube anchors or something if deeper footings are required.
