Need mowing advice after overseeding

A week ago I mowed short (1+ inch), dethatched, had the lawn core aerated, and then I topdressed with 1/4" Leafgro, fertilized, and overseeded with Tall Fescue and lightly raked in. Since then I've lightly watered three times a day to keep it moist. The seed hasn't germinated yet, but the existing grass is starting to get long again. Can I mow soon to keep the existing grass from getting too high? And should I bag or mulch? I recently had the blade sharpened. I live in a Maryland suburb of Washington, DC. Thanks.

Mow at tallest setting. You have a nice sharp blade so that is good. I would not bag the clippings.
