I've removed a portion of a plaster/plaster board wall to repair the sill plate and exterior wall, redo the electrical and reinsulate. The old wall was about 7/8 to 1" thick. When replacing the wall with sheetrock, should i use two pieces of 1/2" board, or should i try to use 3/8 or 1/2" furring strips and one piece of sheetrock? Where do I get 3/8 or 1/2" furring strips (i suppose that I can cut them from plywood or a 2x6)? Thoughts?

You "could" purchase 3/8" or 1/2" Furing strips from a Big Home Improvement Store, however, I would suggest just cutting them out of plywood, as it will not split, the way such purchased material will.

Use the old plaster lathes. Plaster was usually about a 1/2" thick variable,,but close enough. IF you have trim to replace its easier to get the wall out to that first rather than later!!
