Question re paneling

My house was built during the '30s. It has plaster walls. What I want to do is install paneling on several of them - especially in the kitchen, bath & living room.

From the baseboard to the ceiling the heigth is about 8 1/2 feet. I was planning to use 4 x 8 panel sections. Where can I get some ideas for filling in the extra 6 inches or so? Molding at the top? In the middle?

Thanks!
