How should i proceed?

I have to renovate/update my kitchen and washroom. I also want to replace the windows. This link shows what i have on my walls. (I think it is plaster and plaster board?). Do i just remove it all down to studs or can i just remove the plaster and mud over the existing board?

Was this common long ago?

That is rock lath---it is still in use---remove the whole thing---time to get back to the studs so you can update the electrical and get modern insulation in---remember that that plaster is thicker than drywall--

if you are replacing windows and doors--no problem---if the doors and windows stay you may wish to add furring strips so the drywall is flush with the existing jambs.
