Grout color different from what it was supposed to be?

I bought and used some grout a couple of different times. The color was supposed to be almond. When wet it was almond colored, but every time it dried out white.
The fellow at the hardware store suggested I put in too much water. My first try that was true, but it turned out the same color the other times, when I used the proper amount of water. Have any of you had this experience?
