I am about to put up some paper faced metal corner bead for outside corners. Is there any reason I can't/shouldn't use construction adhesive to glue the bead to the drywall instead of using drywall mud?

No, the construction adhesive would be over-kill, and may even make it more difficult.

Not to mention if the corner gets bumped hard enough the corner bead will separate from the wall. Screw it in.

You don't screw in metal paper face beads. A metal paper face bead is set with Mud and you either use a mud hopper to put the mud on then use a Conner roller to press it on or you put the mud on the cornner and press it in and roll and use your 6 inch knife to scrape the excess mud off. In 24 hours you won't be able to kick that corner bead off.
