How would you seal out the weather? Do these doors go to the exterior?

check the rough opening size for height.
the standard for exterior doors is an 80 inch door slab plus the top jamb plus the threshold plus some wiggle room (1/2 inch +/-). you may need to special order the door or spend some time changing the height, but it should be doable. if there is a header for the 200" rough opening there already, you should be good to go. you will need some framing installed for the door installation, which will greatly reduce the span and make the header 'too strong', but that is better than the other option.
