Bathtub Area Remodel
I currently have a 60x30x60 plastic surround above my bathtub, and am wanting to put tile around it instead. I probably am not interested in changing the tub out, just adding backer board, tile, and new fixtures. My question is will this weigh significantly more that what I have now (obviously it will), but how much of an extra strain will it put on things, mainly the floor joists and such? Or should it not matter at all?

Unless your floor/joists is/are rotten and disintegrating, you should be just fine.

I'd wager setting aside the whole weekend may be your best bet. 16 hour days.
You'll no doubt run into "something" that will slow you down. Murphy's Law. DM
