basement bath install

Got a question for all the pros out there. We are building a bath in our basement (ground level) of a multi-level. There was water there for a"bar" and under the cabinets there was a waste pipe. So it seems straight forward. My question: This area is directly below main bath and a 1/2 bath. Right now there is a suspended ceiling in the new bath area and 2 of the tiles have moisture spots. We had to fix leaks when we bought the house. This does not have to be a bath for a castle, just something functional. What could we install on the ceiling that could be removed easily if there were water issues or leaks from upstairs again. I also wouldn't mind reclaiming the 3 1/2in of ceiling height from removing the drop ceiling. Thank you in advance... any ideas are appreciated.

I saw an episode of Hometime where they installed decorative drop tiles that were recessed "trays". Made for a very different look than standard drop tiles, kind of European IMHO.

drywall with an access panel of somekind? maybe build a custom one out of mdf with some nice trim around the opening.
