Default Uneven ceiling

I want to place simple crown moulding along my ceiling. I noticed that the ceiling is uneven. If I put the moulding in place along the ceiling, it looks off because the uneven ceiling. If I use a level, then there is a space between the ceiling and the moulding.

Is there a trick that i could use to put moulding in place to cover up the poor job my builder did in installing the ceiling?

What kind of finished surface does the ceiling have?

Knockdown/skip trowel

some places the difference between a straight and level line and the ceiling is 1/2 inch....it is not noticable until you put the line up...

If the length of the run of the gaps isn't too long, could you feather in a thicker portion of the ceiling with drywall mud to bring it to the top of the crown molding, and then do another knockdown on the new section to match the old?
