Default stairs question, part deux

When cutting outdoor stringers:

Say my rise/run is 6 1/2 and 10 1/4. Then I go to cut the runs out of square to say 6 1/4. Doesn't that effectively make my last step up to the deck too long by 1/4? Or, do I simply yank up on the stringer to make the last measurement the same as all the others (thereby making my treads even MORE out of square?)?

What is the solution?

Also, I've got an unlevel landing. Should I measure from the lowest point and level the others from there, level from the highest point, or in the middle and then try to cut the others to match?
