sealing kitchen countertop

I built a mahogany countertop for my kitchen.It will have a self rimming sink.It will have a free standing stove.The stove will butt against the top on both sides.The old countertop got rather hot when the stove was on high.Ater some investigating I found out that epoxy breaks down at 140-160 degrees.Tung oil has been suggested.Do you poly over tung oil?What type of poly to use?Any suggestions on a type of sealer will be appreciated.

The oil you use needs to be something that is not toxic and can be ingested.....there are oils used to dress wood salad bowls that will not go ransid and are non toxic. I would cantact a commercial kitchen supply outlet as they would have the product for butcher style blocks in commercial kitchens.
