polyurethane treads BEfore applying?

Im currently replacing the treads and risers (risers will be painted).
two questions...Im assuming I can just poly the treads WIThOUT staining them correct? and secondly can i poly them prior to installing them? I was thinking of polying them right up until the last coat, i could then install them and apply the last coat...what do you all think? (I would already have them cut to fit prior to polying them, obviously) Im using red oak btw.

No need to stain if you like the look of only poly. No reason not to do all coats prior to install.

Make sure to sand the treads before the poly, if not you may see lines across the board from the planner.
