This is such a strange posting on so many levels. Especially from someone who says he's a contractor.
Any decent quality cabinets are made so any countertops can be installed on top of them. It's not the cabinets that are the issue, it's the floor the cabinets are set on.
Why would there be visable shims to stain or cover with molding after you set everyting "level" to within a 1/6". It's either level or it isn't.
Any competant cabinet installer should be able to set cabinets ready for any counter.
I really don't see the need to go to the extra expense for your services if there are shims that need to be stained to match or covered with molding.
That's what you're there to eliminate.

I agree with the above statement for the most part. I would have to add the following: Installing the cabinets plumb and level is part of doing the job correctly. There should be no additional charge to the client for what is part of the job anyway.

Umm... my new kitchen cabinets were leveled (with shims) to the very unlevel concrete floor - tools used were a couple different length regular levels. Then the granite guys came in and installed plywood and the granite without having to shim addionally.

Maybe I am not understanding the OP...
