how much Drywall to use???

Have not started the actual dry walling process yet. I am currently in progress of gutting the upstairs. Trying to save some work for the contractor doing the job. Going to also have to put the roof up first this spring. "Which is right around the corner" I have started to rip down the walls in the master bedroom. The Plaster will not come down in whole pieces :-( It is piece by piece. Very annoying. I so far have found a "bee hive" in my master bedroom wall! And a Burnt piece of wood??? Guess there was a fire at one time. Strangely thats the only burnt piece of wood so far???

I see two layers of would inside the "Plaster and Lathe" And it looks to be in pretty good shape! So hopefully I can get some insulation in there and then seal it up with some Drywall.

Atlantic I wish you lived closer :-( I'd have you come to take a look and probably do the work!!! If you wanted of course
