Covering stringers with Azek

Looking to cover existing deck stair stringers with Azek or Veranda board to give it a nice finished look.
Long run of stairs (11 steps),fairly uniform 7/11 rise/run.
Question,Cheapo Depot sells a 5 and a 6 stair riser kit,do you think its possible to use those as a template to cut the Azek,then fit it up to the stringers?
The stairs are seperated between the 5th and 6th step by a post,which will also need to be covered.

just cut the level and plumb cuts on the azec so it can be tacked in place on the side of the stringer then trace the stringer notches in place. cut and nail off
